Chorizo Breakfast Tacos w/ Homemade Fermented Salsa

I made a delicious lacto fermented salsa recipe specifically for these tacos. Link is right below!

Ingredients:

6 oz chorizo, cut into small pieces if using precooked

A few spoonfuls of salsa, mine is homemade (lacto fermented)

3 whole eggs

1 tsp heavy cream

1 tbsp oil

2 oz shredded mozarella or cotija

1 avocado

1 lime zested and juiced

1/2 c black beans, cooked

2 tbsp freshly chopped cilanro

Spoonful sour cream

Tools needed:

Slotted spoon

Mixing bowl

Wire whisk

Rubber spatula

Sharp knife

Cutting board

Cast iron pan or non stick pan

How to make it:

Warm up pan on medium heat for 1 minute. Remove chorizo from its casing. Add oil and chorizo, cook chorizo until heated through. Remove chorizo from the pan if desired or cook the eggs with the chorizo. Whisk eggs with heavy cream and pinch salt. Add to the pan and cook the eggs stirring to break up and scramble. Once eggs are cooked through, turn off the heat and add the cheese in folding until melted.

Plate the tacos with eggs, chorizo, beans, avocado, sour cream and salsa. Top with zested lime and a few drops of juice.
